Ginger Turmeric Chicken Soup

Ingredients

1 tbsp olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 inch fresh ginger, grated
1 tsp ground turmeric
1/2 tsp black pepper
1 1/2 lbs chicken thighs, boneless and skinless
8 cups chicken broth
2 medium carrots, sliced
2 stalks celery, sliced
1 cup baby spinach
1/2 cup quinoa
1 tbsp lemon juice
Salt to taste
Fresh cilantro for garnish

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook until translucent, about 5 minutes.
3. Stir in minced garlic, grated ginger, ground turmeric, and black pepper; cook for another 2 minutes until fragrant.
4. Add chicken thighs and cook until slightly browned on all sides.
5. Pour in chicken broth and bring to a boil.
6. Reduce heat to low, cover, and simmer for 20 minutes.
7. Add sliced carrots, celery, quinoa, and salt; simmer for another 15 minutes until vegetables and quinoa are tender.
8. Stir in baby spinach and lemon juice, cooking just until spinach wilts.
9. Remove chicken thighs, shred with two forks, and return to the pot.
10. Serve hot, garnished with fresh cilantro.

Storage

Store any leftover soup in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a saucepan over low heat until warmed through, adding additional broth if necessary.
