Ingredients
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon ground turmeric
3 large carrots, sliced
2 stalks celery, chopped
8 cups chicken broth
2 cups cooked chicken, shredded
2 cups egg noodles
1 tablespoon soy sauce
1 tablespoon lemon juice
Salt and pepper to taste
1/2 cup fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion and sauté until translucent, about 5 minutes.
3. Stir in garlic, ginger, and turmeric, cooking for another 2 minutes.
4. Add carrots and celery, sautéing for 5 minutes until slightly tender.
5. Pour in chicken broth and bring to a boil.
6. Reduce heat and let simmer for 15 minutes.
7. Stir in cooked chicken and egg noodles, simmering until noodles are tender, about 8 minutes.
8. Add soy sauce and lemon juice, then season with salt and pepper to taste.
9. Stir in fresh parsley and serve warm.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat on the stovetop over medium heat until warmed through, or microwave in a microwave-safe bowl for 2-3 minutes, stirring halfway.
