Ginger Lemongrass Wonton Soup

A delightful twist on the classic wonton soup, this recipe infuses ginger and lemongrass for an aromatic, comforting dish perfect for a cozy evening.

Ingredients

1 lb ground chicken
8 oz shrimp, peeled and chopped
2 tbsp ginger, minced
2 stalks lemongrass, finely chopped
2 cloves garlic, minced
1 tbsp soy sauce
1 tsp sesame oil
40 wonton wrappers
6 cups chicken broth
2 cups baby bok choy, chopped
4 green onions, sliced
Salt and pepper to taste

Instructions

1. In a large bowl, mix ground chicken, shrimp, ginger, lemongrass, garlic, soy sauce, and sesame oil until well combined.
2. Place a teaspoon of filling in the center of each wonton wrapper, moisten the edges with water, and fold to seal.
3. Bring the chicken broth to a simmer in a large pot.
4. Gently add the wontons into the broth and cook for 5 minutes or until they float to the top.
5. Add the baby bok choy and cook for an additional 2 minutes.
6. Season with salt and pepper, then garnish with green onions before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 2 days.

Reheating

Reheat gently over medium heat on the stove until warmed through.
