Ginger-Infused Strawberry Jam

A unique twist on classic strawberry jam with a hint of ginger; perfect for enhancing breakfast spreads or using as a dessert topping.

Serves: 4

Ingredients

2 lbs fresh strawberries
1 lb granulated sugar
2 tbsp lemon juice
1 tbsp fresh grated ginger
1 tsp vanilla extract

Instructions

1. Wash and hull the strawberries, then halve them.
2. In a large bowl, combine strawberries and sugar. Let sit for 30 minutes to macerate.
3. Transfer the mixture to a pot over medium heat. Add lemon juice and grated ginger.
4. Bring the mixture to a boil, stirring frequently. Reduce heat and simmer for about 40 minutes, or until the mixture thickens.
5. Remove from heat and stir in the vanilla extract.
6. Allow to cool slightly before transferring to sterilized jars.

Storage

Store in sterilized jars in the refrigerator for up to 3 weeks or can be sealed in a hot water bath for longer shelf life.

Reheating

Serve chilled or at room temperature; do not reheat.
