Garlic Lemon Green Bean Casserole

Ingredients
2 lbs fresh green beans, trimmed
1 tbsp olive oil
1 cup sliced mushrooms
3 cloves garlic, minced
1 cup heavy cream
1/4 cup chicken broth
1 tbsp lemon zest
1/2 cup grated Parmesan cheese
1/2 cup crispy fried onions
Salt and pepper to taste
Instructions
1. Preheat oven to 350°F (175°C).
2. Bring a large pot of salted water to a boil. Add green beans and cook for 5 minutes. Drain and set aside.
3. In a large skillet, heat olive oil over medium heat. Add mushrooms and garlic, sautéing until mushrooms are tender, about 5 minutes.
4. Stir in heavy cream, chicken broth, and lemon zest. Bring to a simmer and cook for 3 minutes.
5. Add the cooked green beans to the skillet, tossing to coat in the sauce. Season with salt and pepper to taste.
6. Transfer the mixture to a 9x13 inch baking dish. Sprinkle with Parmesan cheese and crispy fried onions.
7. Bake in the preheated oven for 15 minutes, or until the top is golden brown.
8. Serve immediately.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes or until warmed through.
