Garlic Herb Spaghetti Squash

Ingredients
1 medium spaghetti squash
2 tbsp olive oil
3 cloves garlic, minced
1/4 cup fresh basil leaves, chopped
1/4 cup fresh parsley, chopped
1/2 tsp salt
1/4 tsp black pepper
1/4 cup grated Parmesan cheese (optional)
1 tbsp lemon juice
Instructions
1. Preheat the oven to 400°F (200°C).
2. Cut the spaghetti squash in half lengthwise and remove the seeds.
3. Brush the inside of the squash with olive oil and season with salt and pepper.
4. Place the squash halves cut side down on a baking sheet and roast for 40 minutes, or until tender.
5. In a small pan, heat the remaining olive oil over medium heat and sauté the minced garlic until fragrant.
6. Use a fork to scrape the flesh of the squash into strands and place in a large bowl.
7. Add the sautéed garlic, fresh basil, parsley, and lemon juice to the squash strands and toss to combine.
8. Optionally, sprinkle with Parmesan cheese before serving.
Storage
Store leftover spaghetti squash in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the microwave or on the stovetop over low heat until warmed through.
