Garlic and Rosemary Mashed Potatoes

These creamy mashed potatoes are a holiday favorite, combining the rich flavors of roasted garlic and fresh rosemary. Perfect as a side for any Christmas main dish.

Ingredients

2 lbs russet potatoes, peeled and cubed
1/2 cup unsalted butter
1/2 cup heavy cream
1 bulb of garlic
2 sprigs of fresh rosemary
Salt and pepper to taste
Olive oil, for roasting garlic

Instructions

1. Preheat your oven to 400°F (200°C).
2. Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
3. Meanwhile, boil the potatoes in a large pot of salted water until tender, about 15 minutes.
4. Drain the potatoes and return them to the pot.
5. Squeeze the roasted garlic out of its skins and add to the potatoes.
6. Add butter, heavy cream, and rosemary leaves to the pot.
7. Mash until smooth and creamy, seasoning with salt and pepper to taste.
8. Serve warm.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a microwave-safe dish, covered, on medium heat, stirring occasionally until heated through.
