Garlic and Herb Slow Cooker Beef Short Ribs

Tender slow-cooked beef short ribs infused with aromatic garlic and fresh herbs, perfect for a hearty family dinner.

Ingredients

4 lbs beef short ribs
2 tbsp olive oil
1 large onion, finely chopped
6 cloves garlic, minced
1 cup beef broth
1/2 cup red wine
2 tbsp tomato paste
2 tsp fresh rosemary, chopped
2 tsp fresh thyme, chopped
Salt and pepper to taste

Instructions

1. Season the beef short ribs with salt and pepper.
2. In a skillet, heat olive oil over medium-high heat.
3. Brown the short ribs on all sides, then transfer to the slow cooker.
4. In the same skillet, sauté onions and garlic until fragrant.
5. Add tomato paste, stirring for a minute, then deglaze with red wine.
6. Pour in beef broth, add rosemary and thyme, and bring to a simmer.
7. Transfer the mixture to the slow cooker, covering the short ribs.
8. Cook on low for 8 hours or until the meat is tender.
9. Serve warm with your choice of sides.

Storage

Store leftover beef short ribs in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat the beef short ribs in a saucepan over medium heat until warmed through or in the microwave.
