Garlic & Herb Scalloped Potatoes

Ingredients

2 lbs russet potatoes (thinly sliced)
1 cup heavy cream
1 cup whole milk
3 cloves garlic (minced)
2 tsp fresh thyme leaves
2 tsp salt
1 tsp black pepper
1 cup shredded Gruyere cheese
1/2 cup grated Parmesan cheese
1 tbsp unsalted butter (for greasing)

Instructions

1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter.
2. In a saucepan, combine heavy cream, whole milk, minced garlic, and fresh thyme. Heat over medium heat until warm, but do not boil.
3. Layer half of the sliced potatoes in the baking dish. Season with salt and pepper.
4. Pour half of the warm cream mixture over the potatoes.
5. Sprinkle half of the Gruyere and Parmesan cheeses over the top.
6. Repeat the layers with the remaining potatoes, cream mixture, and cheeses.
7. Cover the dish with foil and bake for 45 minutes.
8. Remove the foil and bake an additional 15 minutes, or until the top is golden and bubbly.
9. Allow to cool slightly before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 350°F (175°C) for 15-20 minutes or until heated through.
