Garden Vegetable Medley

Ingredients
1 cup cherry tomatoes, halved
1 cucumber, sliced
1 red bell pepper, diced
1 carrot, grated
1/4 red onion, thinly sliced
1/4 cup fresh parsley, chopped
2 tbsp olive oil
1 tbsp lemon juice
Salt and pepper to taste
Instructions
1. In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, carrot, red onion, and parsley.
2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
3. Pour the dressing over the salad and toss gently to combine.
4. Serve immediately or chill for 30 minutes to allow the flavors to meld.
Storage
Store leftovers in an airtight container in the refrigerator for up to 2 days.
