Garden Vegetable Bolognese

Ingredients
2 tbsp olive oil
1 cup diced carrots
1 cup diced celery
1 cup diced zucchini
1 cup diced mushrooms
1 large onion, diced
3 cloves garlic, minced
1 cup lentils, rinsed
1 can (28 oz) crushed tomatoes
1 tbsp tomato paste
1 tsp dried oregano
1 tsp dried basil
1/2 tsp crushed red pepper flakes
Salt and pepper to taste
1/4 cup fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add diced carrots, celery, zucchini, mushrooms, and onion. Sauté for 5-7 minutes until vegetables are soft.
3. Stir in minced garlic and cook for another minute.
4. Add lentils, crushed tomatoes, tomato paste, oregano, basil, red pepper flakes, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 35-40 minutes, stirring occasionally, until lentils are tender.
6. Stir in fresh parsley just before serving.
Storage
Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
Reheating
Reheat gently in a pot over low heat, or microwave until warmed through, adding a splash of water if needed to reach desired consistency.
