Ingredients

2 tbsp olive oil
1 large onion, diced
2 cloves garlic, minced
2 carrots, sliced
2 stalks celery, chopped
1 zucchini, diced
1 cup green beans, trimmed and halved
1 red bell pepper, diced
1 can (15 oz) diced tomatoes
4 cups vegetable broth
1 can (15 oz) cannellini beans, drained and rinsed
1/2 cup small pasta (such as ditalini)
1 cup kale, chopped
1 tsp dried oregano
1/2 tsp dried thyme
Salt and pepper to taste
1/4 cup fresh basil, chopped
Grated Parmesan cheese, for serving

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add diced onions and minced garlic, sauté until onions are translucent.
3. Stir in carrots and celery, cook until they begin to soften.
4. Add zucchini, green beans, and red bell pepper, cooking for another 5 minutes.
5. Pour in diced tomatoes and vegetable broth, bring to a boil.
6. Reduce heat and simmer for 15 minutes.
7. Stir in cannellini beans and pasta, cooking for additional 8-10 minutes until pasta is al dente.
8. Add kale and season with oregano, thyme, salt, and pepper.
9. Simmer for 5 more minutes, then stir in fresh basil.
10. Serve hot with grated Parmesan cheese on top.

Storage

Store in an airtight container in the refrigerator for up to 5 days.

Reheating

Reheat on the stove over medium heat until heated through, or microwave for 2-3 minutes, stirring midway.
