Garden Herb Potato Salad
A refreshing twist on the classic potato salad, this Garden Herb Potato Salad combines fresh herbs and tangy dressing for a delightful and satisfying side dish.

Ingredients
2 lbs red potatoes
1 cup Greek yogurt
1/4 cup mayonnaise
2 tbsp apple cider vinegar
1 tbsp Dijon mustard
1/4 cup chopped fresh dill
1/4 cup chopped fresh parsley
1/4 cup chopped fresh chives
1/2 cup diced celery
1/4 cup diced red onion
Salt to taste
Black pepper to taste
Instructions
1. Begin by boiling the potatoes in a large pot of salted water until fork-tender, approximately 20 minutes.
2. While potatoes are cooking, in a mixing bowl, combine Greek yogurt, mayonnaise, apple cider vinegar, and Dijon mustard. Mix until smooth.
3. Add chopped dill, parsley, and chives to the dressing and stir well.
4. Once potatoes are cooked, drain and let them cool slightly. Cut them into bite-sized pieces and place them in a large bowl.
5. Add diced celery and red onion to the potatoes.
6. Pour the herb dressing over the potato mixture and gently toss to combine.
7. Season with salt and black pepper to taste.
8. Chill the salad in the refrigerator for at least an hour before serving to allow flavors to meld.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Serve chilled, no reheating necessary.
