Garden Herb Gazpacho

A refreshing twist on traditional gazpacho, Garden Herb Gazpacho incorporates fresh herbs for a vibrant flavor, perfect for summer meals. Naturally vegan and gluten-free, it is an easy appetizer for hot days.

Ingredients

2 lbs ripe tomatoes
1 large cucumber, peeled and diced
1 bell pepper, diced
1 small red onion, diced
2 cloves garlic, minced
1/4 cup fresh basil leaves, chopped
1/4 cup fresh cilantro, chopped
1/4 cup fresh parsley, chopped
1/4 cup olive oil
2 tbsp red wine vinegar
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
2 cups vegetable broth
1 lemon, juiced

Instructions

1. In a blender, combine tomatoes, cucumber, bell pepper, onion, and garlic. Blend until smooth.
2. Add basil, cilantro, parsley, olive oil, vinegar, salt, black pepper, and cayenne. Blend again until well combined.
3. Gradually add vegetable broth and lemon juice, blending until desired consistency is reached.
4. Taste and adjust seasoning if necessary.
5. Chill in the refrigerator for at least 2 hours before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Consume cold; reheating is not recommended for gazpacho.
