Ingredients
1 tablespoon olive oil
1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
4 cups chicken broth
2 cups water
1 cup carrots, diced
1 cup celery, sliced
1 onion, diced
2 cups egg noodles
2 tablespoons fresh parsley, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
2 cloves garlic, minced
Salt and pepper, to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add chicken thighs and cook until browned on all sides.
2. Add onions, carrots, celery, and garlic to the pot. Sauté until the vegetables are tender, about 5 minutes.
3. Pour in chicken broth and water. Bring the mixture to a boil.
4. Stir in egg noodles and cook according to package instructions until tender, about 8 minutes.
5. Add parsley, thyme, and rosemary. Season with salt and pepper to taste. Simmer for an additional 5 minutes to allow flavors to meld.
6. Serve hot, garnished with additional fresh herbs if desired.
Storage
Allow the soup to cool completely before transferring to an airtight container. Store in the refrigerator for up to 3 days.
Reheating
Reheat gently over medium heat in a pot on the stove, stirring occasionally, until heated through. Alternatively, microwave in a microwave-safe bowl until hot.
