Garden Greens Diet Soup

Ingredients

5 cups of water
2 cups of chopped spinach
1 cup of diced zucchini
1 cup of sliced carrots
1/2 cup of chopped celery
1/2 cup of diced tomatoes
1/4 cup of chopped onions
2 cloves of garlic, minced
1 tbsp of olive oil
1 tsp of salt
1/2 tsp of black pepper
1 tsp of dried basil
1 tsp of dried oregano
1 tbsp of lemon juice

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onions and garlic, sauté until onions are translucent.
3. Stir in the carrots, zucchini, and celery, cooking for about 5 minutes.
4. Pour in the water and bring to a boil.
5. Add the chopped spinach, diced tomatoes, salt, pepper, basil, and oregano.
6. Reduce heat to a simmer and cook for 20 minutes, stirring occasionally.
7. Stir in lemon juice before serving.

Storage

Store in an airtight container in the refrigerator for up to 5 days.

Reheating

Reheat gently on the stove over low heat, stirring occasionally, until warmed through.
