Garden Fresh Shepherd’s Pie

Ingredients
1 lb ground turkey
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 cup carrots, diced
1 cup zucchini, diced
1 cup bell peppers, diced
1 cup peas
2 cups fresh spinach
2 tbsp tomato paste
1 cup chicken broth
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
4 cups mashed potatoes
1/2 cup grated cheddar cheese
1/4 cup chopped fresh parsley
Instructions
1. Preheat oven to 400°F.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until fragrant.
3. Add ground turkey, cook until browned.
4. Stir in carrots, zucchini, and bell peppers, cook for 5 minutes.
5. Add peas, spinach, tomato paste, chicken broth, thyme, rosemary, salt, and pepper. Simmer for 10 minutes.
6. Transfer mixture to a baking dish and spread mashed potatoes evenly on top.
7. Sprinkle with cheddar cheese and bake for 20 minutes or until golden brown.
8. Garnish with parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F for 15-20 minutes or until heated through.
