Funfetti Cake Pops
These vibrant Funfetti Cake Pops are a delightful treat perfect for any celebration. With a moist vanilla cake center, dipped in decadent white chocolate, and topped with a sprinkle of colorful confetti, they bring joy in every bite.

Ingredients
1 box vanilla cake mix
3 large eggs
1/2 cup vegetable oil
1 cup water
1 cup vanilla frosting
1 cup rainbow sprinkles
2 cups white chocolate chips
1 tbsp coconut oil

Instructions
1. Preheat oven to 350°F (175°C) and grease a 9x13 inch cake pan.
2. In a large bowl, combine the cake mix, eggs, vegetable oil, and water. Mix until smooth.
3. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
4. Allow the cake to cool completely, then crumble into fine crumbs in a large bowl.
5. Add vanilla frosting and half of the rainbow sprinkles to the cake crumbs. Mix until well combined.
6. Roll the mixture into 1-inch balls and place on a baking sheet lined with parchment paper.
7. Insert a lollipop stick into each cake ball and freeze for 20 minutes.
8. In a microwave-safe bowl, combine white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
9. Dip each cake pop into the melted white chocolate, gently tapping off the excess.
10. Immediately sprinkle with remaining rainbow sprinkles before the chocolate sets.
11. Place the cake pops upright in a styrofoam block to dry completely.
Storage
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
Reheating
Allow the cake pops to come to room temperature before serving. Do not reheat.
