Ingredients

8 oz rotini pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red bell pepper, diced
1/2 cup yellow bell pepper, diced
1/4 cup red onion, finely chopped
1/2 cup black olives, sliced
1/2 cup mozzarella cheese, cubed
1/4 cup parmesan cheese, grated
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
1/2 cup Italian dressing
Salt and pepper to taste

Instructions

1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse with cold water.
2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red and yellow bell peppers, red onion, black olives, mozzarella cheese, and parmesan cheese.
3. Add the cooked pasta to the bowl with the vegetables and cheese.
4. Pour the Italian dressing over the pasta salad and toss gently to combine all ingredients well.
5. Season with salt and pepper to taste.
6. Add the chopped fresh basil and parsley, tossing lightly to distribute the herbs evenly.
7. Cover the pasta salad and refrigerate for at least 30 minutes before serving to allow flavors to meld together.
