Ingredients

1 lb ground turkey
1 packet taco seasoning
1 cup salsa
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels
1/2 cup diced red bell pepper
1/2 cup diced green bell pepper
2 cups shredded Mexican cheese blend
2 cups tortilla chips, crushed
1/4 cup chopped fresh cilantro
1/2 cup sour cream
1/4 cup sliced green onions
1 tbsp olive oil
Salt and pepper to taste

Instructions

1. Preheat your oven to 375°F (190°C).
2. In a large skillet over medium heat, add olive oil and ground turkey. Cook until browned.
3. Stir in taco seasoning, salsa, black beans, corn, red bell pepper, and green bell pepper. Cook for another 5 minutes.
4. Transfer the mixture to a baking dish and spread evenly.
5. Sprinkle shredded cheese over the top, followed by crushed tortilla chips.
6. Bake in the preheated oven for 20 minutes or until the cheese is bubbly and golden.
7. Remove from oven, garnish with cilantro, sliced green onions, and serve with sour cream.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat individual portions in the microwave for 1-2 minutes or until heated through.
