Fiesta Stuffed Peppers

Ingredients

4 large bell peppers
1 lb ground turkey
1 tbsp olive oil
1 tsp cumin
1 tsp paprika
1 tsp chili powder
1/2 cup diced onions
1 cup cooked brown rice
1 can (15 oz) black beans, drained
1 cup corn kernels
1 cup shredded Mexican cheese blend
1/2 cup salsa
Salt and pepper to taste
Chopped cilantro for garnish

Instructions

1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove seeds and membranes.
3. In a large skillet, heat olive oil over medium heat. Add onions and sauté until translucent.
4. Add ground turkey, cumin, paprika, chili powder, salt, and pepper. Cook until turkey is browned.
5. Stir in cooked rice, black beans, corn, and salsa. Mix well and let simmer for 5 minutes.
6. Stuff each pepper with the turkey mixture and place in a baking dish.
7. Sprinkle cheese on top of each stuffed pepper.
8. Cover with foil and bake for 30 minutes.
9. Remove foil and bake for an additional 10 minutes or until peppers are tender.
10. Garnish with chopped cilantro before serving.

Storage

Store leftover stuffed peppers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 350°F (175°C) for 15-20 minutes or until heated through, or microwave for 2-3 minutes.
