Ingredients

4 slices of sourdough bread
2 tbsp unsalted butter, softened
1 cup shredded pepper jack cheese
1 cup shredded sharp cheddar cheese
1 jalapeño pepper, thinly sliced
1/4 tsp smoked paprika
1/4 tsp garlic powder
1/4 tsp crushed red pepper flakes

Instructions

1. Preheat a large skillet over medium heat.
2. Butter one side of each bread slice with the softened butter.
3. On the unbuttered side of two slices, layer half of the pepper jack cheese and half of the cheddar cheese.
4. Evenly distribute the jalapeño slices over the cheese layers.
5. Sprinkle smoked paprika, garlic powder, and crushed red pepper flakes over the jalapeños.
6. Top with the remaining cheese and place the other slices of bread, buttered side up, on top.
7. Carefully place the sandwiches in the preheated skillet and grill each side for about 3-4 minutes, or until the bread is golden brown and the cheese is melted.
8. Remove from skillet and allow to cool slightly before slicing.

Storage

Store in an airtight container in the refrigerator for up to 2 days.

Reheating

Preheat oven to 350°F. Place sandwich on a baking sheet and cover with foil. Heat for 10 minutes or until warmed through.
