Festive Christmas Morning Casserole

Ingredients

1 lb ground breakfast sausage
1 red bell pepper, diced
1 green bell pepper, diced
1/2 cup onion, chopped
2 cups sharp cheddar cheese, shredded
8 large eggs
2 cups whole milk
1 tsp salt
1/2 tsp black pepper
8 slices of white bread
1/4 cup parsley, chopped
1/4 tsp nutmeg

Instructions

1. Preheat your oven to 350°F.
2. In a large skillet over medium heat, cook the sausage until browned. Drain excess fat.
3. Add the diced bell peppers and onion to the sausage and cook until softened.
4. Grease a 9x13-inch baking dish and layer the bottom with half of the bread slices.
5. Evenly spread the sausage and pepper mixture over the bread.
6. Sprinkle half of the cheddar cheese over the sausage mixture.
7. Top with the remaining bread slices.
8. In a large bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.
9. Pour the egg mixture over the casserole, allowing it to soak into the bread.
10. Sprinkle the remaining cheese on top.
11. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
12. Garnish with chopped parsley before serving.

Storage

Cover and refrigerate leftovers for up to 3 days.

Reheating

Reheat individual portions in the microwave for 1-2 minutes or until heated through.
