Ingredients
1 wheel of Brie cheese (about 8 oz)
1 cup fresh cranberries
1/4 cup honey
1/4 cup brown sugar
1/2 cup pecans, roughly chopped
1/4 teaspoon cinnamon
1 tablespoon unsalted butter
1 teaspoon vanilla extract
Pinch of salt
Crackers or sliced baguette for serving
Instructions
1. Preheat your oven to 350°F (175°C).
2. Place the Brie on a baking sheet lined with parchment paper.
3. In a medium saucepan over medium heat, combine cranberries, honey, brown sugar, butter, cinnamon, vanilla extract, and a pinch of salt.
4. Cook for about 5-7 minutes, stirring occasionally, until the cranberries begin to burst and the mixture thickens.
5. Stir in the pecans and remove from heat.
6. Spoon the cranberry pecan mixture over the Brie.
7. Bake in the preheated oven for about 15 minutes, or until the Brie is soft and melty.
8. Remove from the oven, let it cool for a minute before transferring to a serving dish.
9. Serve warm with crackers or sliced baguette.

Store any leftovers in an airtight container in the refrigerator for up to 3 days.

To reheat, place in a preheated oven at 300°F (150°C) for about 10 minutes or until warmed through.
