2 dozen fresh oysters, shucked
4 tbsp unsalted butter
1 cup finely chopped leeks
2 cloves garlic, minced
1/2 cup diced celery
1/2 cup diced carrot
1/4 cup all-purpose flour
4 cups whole milk
1 cup heavy cream
1/4 cup dry sherry
1 tsp Old Bay seasoning
1/2 tsp salt
1/4 tsp black pepper
2 tbsp chopped fresh parsley
1 tbsp lemon juice

Instructions

1. Melt butter in a large pot over medium heat. Add leeks, garlic, celery, and carrot; sauté until softened.
2. Sprinkle flour over the vegetables and stir for 1 minute.
3. Gradually whisk in milk and cream; bring to a simmer while stirring constantly.
4. Add shucked oysters and their liquor, sherry, Old Bay seasoning, salt, and pepper; simmer gently until oysters are plump, about 5 minutes.
5. Stir in parsley and lemon juice, adjust seasoning to taste.
6. Serve hot with crusty bread.
