Ingredients
2 medium eggplants, sliced into 1/4-inch rounds
1 tablespoon salt
2 cups marinara sauce
1 cup roasted red peppers, chopped
1/2 cup fresh basil leaves, chopped
1 1/2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
1 cup Italian-style breadcrumbs
1/2 cup all-purpose flour
3 large eggs, beaten
1/4 cup olive oil
1 teaspoon dried oregano
1 teaspoon garlic powder
Instructions
1: Preheat your oven to 375°F (190°C).
2: Arrange the eggplant slices in a colander and sprinkle them with salt. Let them rest for 30 minutes to draw out moisture.
3: Rinse the eggplant slices under cold water, then pat them dry with paper towels.
4: Prepare three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with garlic powder and oregano.
5: Dredge each eggplant slice in flour, dip in beaten eggs, and coat with breadcrumb mixture.
6: Heat olive oil in a large skillet over medium heat. Fry the eggplant slices until golden brown, about 3-4 minutes per side. Drain on paper towels to remove excess oil.
7: In a baking dish, spread a thin layer of marinara sauce. Layer half of the eggplant slices over the sauce.
8: Top with half of the roasted red peppers, basil, mozzarella, and Parmesan cheese. Repeat the layers using the remaining ingredients.
9: Cover with aluminum foil and bake in the preheated oven for 30 minutes.
10: Remove the foil and bake an additional 10 minutes until the cheese is bubbly and golden brown.
11: Let cool for a few minutes before serving.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place in a preheated 350°F (175°C) oven for 15-20 minutes or until heated through.
