Easy Creamy Spinach & Mushroom Chicken Casserole
This delectable casserole combines tender chicken, earthy mushrooms, and fresh spinach in a rich, creamy sauce, offering a delightful twist on a classic favorite.

Ingredients
1.5 lbs boneless, skinless chicken breasts
1 tbsp olive oil
1 medium onion, diced
2 cups fresh mushrooms, sliced
3 cups fresh spinach leaves
2 cups cooked rice
1 can (10.5 oz) cream of mushroom soup
1 cup sour cream
1 cup shredded mozzarella cheese
1 tsp garlic powder
1 tsp dried thyme
Salt and pepper to taste
Instructions
1. Preheat the oven to 375°F (190°C).
2. Heat olive oil in a skillet over medium heat. Add diced onion and sauté until translucent.
3. Add sliced mushrooms to the skillet and cook until they start to brown.
4. Stir in fresh spinach and cook until wilted. Remove from heat.
5. In a large bowl, combine cream of mushroom soup, sour cream, garlic powder, and thyme. Mix well.
6. Add cooked rice, sautéed vegetables, and raw chicken pieces to the bowl. Season with salt and pepper, and mix thoroughly.
7. Transfer the mixture into a greased 9x13 inch baking dish.
8. Sprinkle shredded mozzarella cheese evenly over the top.
9. Bake in the preheated oven for 30-35 minutes or until the chicken is cooked through and the cheese is bubbly and golden.
10. Let it cool for a few minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual portions in the microwave for 2-3 minutes or in an oven at 350°F until warmed through.
