Dutch Oven Peach Cobbler

Ingredients
6 cups peeled and sliced peaches
1 cup granulated sugar
1/2 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 teaspoons lemon juice
1 tablespoon cornstarch
1 cup all-purpose flour
1 cup old-fashioned oats
1/2 cup unsalted butter, cold and diced
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup boiling water
Instructions
1. Preheat your campfire to medium heat.
2. In a large bowl, combine peaches, 1/2 cup granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir until peaches are evenly coated.
3. Pour peach mixture into the bottom of a Dutch oven.
4. In another bowl, combine flour, oats, remaining 1/2 cup sugar, baking powder, and salt.
5. Cut in butter with a pastry cutter or two knives until the mixture resembles coarse crumbs.
6. Add boiling water to the topping mixture and stir until just combined.
7. Drop spoonfuls of the topping mixture over the peaches, covering them evenly.
8. Cover the Dutch oven with its lid and place it on the campfire.
9. Bake for 30-40 minutes, or until the topping is golden brown and the peaches are bubbling.
10. Remove from heat and let cool slightly before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual servings in a microwave-safe dish for 1-2 minutes or until heated through. Alternatively, reheat in a preheated 350°F oven for 10-15 minutes.
