Ingredients

2 tbsp olive oil
1 cup broccoli florets
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup sugar snap peas
1 medium carrot, julienned
1 small zucchini, sliced
1 cup sliced mushrooms
2 cloves garlic, minced
1 tbsp ginger, grated
2 tbsp soy sauce
1 tbsp sesame oil
Salt and pepper to taste
2 tbsp sesame seeds for garnish

Instructions

1. Heat olive oil in a large pan over medium-high heat.
2. Add broccoli florets and sauté for 2 minutes.
3. Stir in red and yellow bell peppers, sugar snap peas, and carrots; cook for another 3 minutes.
4. Add zucchini and mushrooms to the pan and continue to stir-fry for 3 minutes.
5. Add garlic and ginger, stirring continuously for 1 minute.
6. Pour in soy sauce and sesame oil; mix well until all vegetables are coated and heated through, about 2 minutes.
7. Season with salt and pepper to taste.
8. Garnish with sesame seeds before serving.

Storage
