Decadent Mocha Mayonnaise Cake

Ingredients

1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup granulated sugar
1 cup light brown sugar
1 cup mayonnaise
1 cup brewed coffee, cooled
2 large eggs
1 teaspoon vanilla extract

Instructions

1. Preheat the oven to 350°F and grease two 9-inch round cake pans.
2. In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
3. In another bowl, whisk together the granulated sugar, brown sugar, and mayonnaise until smooth.
4. Gradually add the brewed coffee, eggs, and vanilla extract to the sugar mixture, stirring until well combined.
5. Slowly incorporate the dry ingredients into the wet mixture, stirring until just combined.
6. Divide the batter evenly between the prepared cake pans.
7. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

Storage

Store the cake in an airtight container at room temperature for up to 3 days.

Reheating

To reheat, warm individual slices in the microwave for 15-20 seconds or serve at room temperature.
