Decadent Mocha Chocolate Éclair Delight

Ingredients
1 box (14.4 oz) graham crackers
2 cups heavy cream
1 cup semi-sweet chocolate chips
1 cup strong brewed coffee
1/2 cup granulated sugar
1 tsp vanilla extract
1 pack (3.4 oz) instant chocolate pudding mix
2 cups whole milk
1/2 cup mascarpone cheese
1/4 cup cocoa powder
1/4 cup coffee liqueur (optional)
Instructions
1. Line the bottom of a 9x13 inch baking dish with a single layer of graham crackers.
2. In a saucepan over medium heat, combine heavy cream and chocolate chips, stirring until melted and smooth.
3. Stir in brewed coffee, sugar, and vanilla extract, and let cool slightly.
4. In a mixing bowl, whisk together chocolate pudding mix and milk until thickened.
5. Fold mascarpone cheese into the pudding mixture.
6. Pour half of the cooled chocolate mixture over the graham crackers in the dish.
7. Top with half of the pudding mixture and spread evenly.
8. Add another layer of graham crackers.
9. Repeat layers with remaining chocolate mixture and pudding.
10. Finish with a final layer of graham crackers on top.
11. If using, drizzle coffee liqueur over the top layer of graham crackers.
12. Sprinkle cocoa powder evenly over the top.
13. Cover and refrigerate for at least 4 hours or overnight to set.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Remove from refrigerator and let sit at room temperature for 5-10 minutes to enjoy optimal texture.
