Cucumber Finger Sandwiches
A delicate and refreshing appetizer, these cucumber finger sandwiches combine creamy spread with crisp cucumber slices on tender white bread.

Ingredients
1 loaf white sandwich bread
1 large cucumber, thinly sliced
8 oz cream cheese, softened
1/4 cup mayonnaise
1 tbsp dill, finely chopped
1/2 tsp lemon juice
1/4 tsp salt
1/4 tsp black pepper
Instructions
1. In a bowl, mix together the softened cream cheese, mayonnaise, dill, lemon juice, salt, and black pepper until smooth.
2. Thinly slice the cucumber into rounds.
3. Trim the crusts off each slice of bread.
4. Spread a layer of the cream cheese mixture on one side of each bread slice.
5. Place cucumber slices evenly over the cream cheese on half of the bread slices.
6. Top with the remaining bread slices to form sandwiches.
7. Cut each sandwich into quarters, either triangles or rectangles.
Storage
Store in an airtight container in the refrigerator for up to 24 hours.
Reheating
Best enjoyed without reheating. If needed, let sit at room temperature for 10 minutes before serving.
