Cucumber and Tomato Salad

A refreshing and hydrating summer salad featuring crisp cucumbers, ripe tomatoes, and tangy red onions tossed in a simple homemade vinaigrette.

Ingredients

2 large cucumbers, sliced
3 ripe tomatoes, chopped
1 small red onion, thinly sliced
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh dill, chopped

Instructions

1. In a large bowl, combine sliced cucumbers, chopped tomatoes, and sliced red onion.
2. In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper to make the vinaigrette.
3. Pour the vinaigrette over the cucumber mixture and gently toss to combine.
4. Sprinkle fresh dill over the salad and give it a final toss before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 2 days.

Reheating

This salad is best served fresh and does not require reheating. If chilled, allow it to come to room temperature before serving.
