Ingredients

1 lb fresh green beans, trimmed
1 tbsp olive oil
4 oz sliced mushrooms
1 clove garlic, minced
1/2 cup almond milk
1/2 cup chicken broth
1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
1/2 cup sliced almonds
1/4 tsp black pepper
1/4 tsp salt
1 tbsp unsalted butter

Instructions

1. Preheat your oven to 375°F (190°C).
2. In a large pot of boiling water, blanch the green beans for 3 minutes, then drain and set aside.
3. In a skillet over medium heat, add olive oil and sauté mushrooms and garlic until golden brown, about 5 minutes.
4. Stir in almond milk and chicken broth, then gradually whisk in flour until smooth and thickened.
5. Add Parmesan cheese, salt, and black pepper, stirring until cheese melts.
6. Combine sauce with green beans and transfer to a baking dish.
7. Melt butter in a small pan and toss almonds to coat.
8. Sprinkle almonds over the casserole evenly.
9. Bake for 25 minutes or until the top is golden and bubbly.
10. Let it cool for 5 minutes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 10-12 minutes or until warmed through.
