Crockpot Citrus Chicken Cacciatore

Ingredients

4 boneless skinless chicken breasts
1 large onion, thinly sliced
3 cloves garlic, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
8 oz mushrooms, sliced
1 can (14.5 oz) diced tomatoes
3/4 cup chicken broth
1/4 cup freshly squeezed orange juice
2 tbsp freshly squeezed lemon juice
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
1/4 cup fresh parsley, chopped

Instructions

1. Heat olive oil in a skillet over medium heat and brown the chicken breasts on both sides. Transfer to the crockpot.
2. In the same skillet, sauté the onions and garlic until softened, then add to the crockpot.
3. Add the sliced bell peppers and mushrooms to the crockpot.
4. Pour in the diced tomatoes, chicken broth, orange juice, and lemon juice.
5. Sprinkle the oregano, thyme, salt, and pepper over the ingredients.
6. Stir gently to combine all ingredients well.
7. Cover and cook on low for 6-7 hours or until the chicken is tender.
8. Before serving, garnish with fresh parsley.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating
