Crock Pot Citrus Chicken Cacciatore

A delightful twist on the classic Italian dish, this Crock Pot Citrus Chicken Cacciatore combines tender chicken thighs with vibrant citrus notes, tomatoes, and earthy herbs, making it perfect for a cozy family dinner.

Ingredients

4 lbs bone-in chicken thighs
2 tbsp olive oil
1 large onion, sliced
3 bell peppers (red, yellow, green), sliced
4 cloves garlic, minced
1 (28 oz) can crushed tomatoes
1/2 cup chicken broth
1/4 cup fresh orange juice
1/4 cup fresh lemon juice
1 tbsp tomato paste
1 tsp dried oregano
1 tsp dried basil
1/2 tsp red pepper flakes
Salt and pepper to taste
1/4 cup fresh parsley, chopped
1/4 cup kalamata olives, pitted and halved

Instructions

1. Heat olive oil in a pan over medium heat and brown the chicken thighs on all sides.
2. Transfer the browned chicken to the crock pot.
3. In the same pan, sauté onions, bell peppers, and garlic until soft.
4. Add the sautéed vegetables to the crock pot with the chicken.
5. Pour crushed tomatoes, chicken broth, orange juice, and lemon juice into the crock pot.
6. Stir in tomato paste, oregano, basil, red pepper flakes, salt, and pepper.
7. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
8. Before serving, stir in fresh parsley and olives.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stove over low heat until warmed through, or microwave until hot.
