Crispy Lime-Chipotle Fish Tacos

Ingredients
1 lb cod fillets
1 cup all-purpose flour
2 eggs
1 cup breadcrumbs
1 tsp chipotle powder
1/2 tsp salt
1/2 tsp black pepper
1/4 cup lime juice
1 tbsp olive oil
8 small corn tortillas
1 cup shredded purple cabbage
1/2 cup diced mango
1/4 cup chopped cilantro
1/4 cup sour cream
1 lime, cut into wedges
Instructions
1. Prepare the fish by cutting the cod fillets into strips.
2. In a shallow dish, mix the flour, chipotle powder, salt, and black pepper.
3. In another bowl, whisk the eggs.
4. Dip each piece of fish in the flour mixture, then in the egg wash, and finally coat with breadcrumbs.
5. Heat olive oil in a skillet over medium heat.
6. Cook the fish pieces for about 3-4 minutes on each side until golden brown and crispy.
7. Warm the corn tortillas in a separate pan or microwave.
8. Assemble the tacos by placing fish on each tortilla, then topping with cabbage, mango, cilantro, and a drizzle of sour cream.
9. Squeeze lime juice over the top before serving.
Storage
To store, place the fish and toppings in separate airtight containers and refrigerate for up to 2 days.
Reheating
Reheat the fish in an oven preheated to 350°F for about 10 minutes or until heated through.
