Ingredients

2 lbs boneless chicken breasts

2 large eggs
1 cup grated Parmesan cheese
1 cup panko breadcrumbs
1/4 cup chopped fresh parsley
1 tbsp dried Italian herbs
1/2 cup olive oil
1/4 cup unsalted butter
2 cloves garlic, minced

Instructions

1. Preheat oven to 375°F (190°C).
2. In a shallow dish, combine flour, salt, pepper, garlic powder, and onion powder.
3. In another dish, beat the eggs.
4. In a third dish, mix Parmesan cheese, panko breadcrumbs, chopped parsley, and dried Italian herbs.
5. Dredge chicken breasts in the flour mixture, then dip in eggs, and coat with the Parmesan breadcrumb mixture.
6. Heat olive oil and butter in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
7. Add chicken breasts to the skillet and cook until golden brown on both sides, about 4 minutes per side.
8. Transfer the chicken to a baking sheet and bake in preheated oven until cooked through, about 20 minutes.
