Ingredients
4 white fish fillets (such as cod or haddock)
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh dill
1 teaspoon lemon zest
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons melted butter
1 tablespoon olive oil
1 lemon, cut into wedges for serving
Instructions
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, combine breadcrumbs, Parmesan cheese, parsley, dill, lemon zest, salt, and pepper.
3. Brush each fish fillet with melted butter and olive oil.
4. Dredge the fillets in the breadcrumb mixture, pressing gently to adhere.
5. Arrange the fish on the prepared baking sheet and bake for 15-20 minutes until the crust is golden and the fish flakes easily with a fork.
6. Serve immediately with lemon wedges.
