Ingredients

1 lb fresh green beans, trimmed
2 tbsp olive oil
1 cup sliced almonds
1/2 cup breadcrumbs
2 tbsp lemon zest
1 cup vegetable broth
1 cup heavy cream
1 medium onion, diced
2 cloves garlic, minced
Salt to taste
Pepper to taste

Instructions

1. Preheat oven to 375°F.
2. Blanch the green beans in boiling water for 3 minutes, then transfer to ice water.
3. In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
4. Add almonds and breadcrumbs to the skillet and toast until golden brown.
5. Stir in lemon zest, salt, and pepper.
6. In a separate bowl, mix vegetable broth and heavy cream.
7. Place green beans in a casserole dish, pour the cream mixture over, and top with almond mixture.
