Crispy Corn and Zucchini Fritters

These golden-brown fritters combine the sweetness of corn with the subtle flavor of zucchini for a delightful crunchy appetizer perfect for any gathering.

Ingredients

2 medium zucchinis, grated
1 cup fresh corn kernels
1/2 cup all-purpose flour
1/4 cup cornmeal
1/4 cup grated Parmesan cheese
1 large egg
1/4 cup milk
2 green onions, finely chopped
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon smoked paprika
Vegetable oil for frying

Instructions

1. Grate the zucchinis and squeeze out the excess moisture using a clean kitchen towel.
2. In a large bowl, combine grated zucchini, corn kernels, flour, cornmeal, Parmesan cheese, egg, milk, green onions, baking powder, salt, black pepper, and smoked paprika. Mix until well combined.
3. Heat vegetable oil in a large skillet over medium heat.
4. Scoop 2 tablespoons of the mixture into the skillet and flatten slightly with a spatula. Cook for 2-3 minutes on each side, or until golden brown and crispy.
5. Remove fritters from the skillet and place on a paper towel-lined plate to drain excess oil.
6. Serve warm with your choice of dipping sauce.

Storage

Store leftover fritters in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat fritters in a preheated 350°F oven for 10 minutes or until warmed through.
