Ingredients

1 lb large shrimp, peeled and deveined
1 cup sweetened shredded coconut
1/2 cup panko breadcrumbs

1 tsp salt

2 large eggs
1 tbsp lime zest
1/4 cup lime juice
Oil for frying

Instructions

1. In a bowl, combine the shrimp with lime juice and lime zest, allowing them to marinate for 15 minutes.
2. In a shallow dish, mix the shredded coconut, panko breadcrumbs, flour, salt, and black pepper.
3. Beat the eggs in a separate bowl.

5. Heat oil in a pan over medium-high heat.
6. Fry the shrimp in batches for about 2-3 minutes on each side or until golden brown and crispy.
7. Remove and drain on paper towels.
