Crisp Cucumber & Herb Delight
A refreshing and vibrant cucumber salad featuring a variety of herbs, perfect for a summer picnic or a light side dish, packed with flavor and crunch.

Ingredients
2 large cucumbers, thinly sliced
1/4 cup fresh mint leaves, chopped
1/4 cup fresh dill, chopped
1/4 cup fresh parsley, chopped
1/2 cup red onion, thinly sliced
1/4 cup feta cheese, crumbled
1/4 cup almonds, slivered
1/4 cup white wine vinegar
2 tbsp olive oil
1 tbsp honey
1 tsp salt
1/2 tsp black pepper
Instructions
1. In a large bowl, combine the sliced cucumbers, red onion, mint, dill, and parsley.
2. In a small bowl, whisk together the white wine vinegar, olive oil, honey, salt, and black pepper to make the dressing.
3. Pour the dressing over the cucumber mixture and toss gently to combine.
4. Add the feta cheese and slivered almonds, then toss again to mix.
5. Chill the salad in the refrigerator for at least 15 minutes before serving to enhance the flavors.
Storage
Store the salad in an airtight container in the refrigerator for up to 2 days to maintain freshness.
Reheating
This salad is best served cold and does not require reheating as it is intended to be a refreshing dish.
