Ingredients

12 oz spaghetti
1.5 lbs boneless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp Italian seasoning
1/2 cup sun-dried tomatoes, chopped
3 cups fresh spinach leaves
1 cup heavy cream
1/2 cup chicken broth
1 cup grated Parmesan cheese
2 cloves garlic, minced
1/4 cup fresh basil, chopped
1/4 cup pine nuts
1/4 tsp red pepper flakes

Instructions

1. Cook spaghetti according to package instructions; drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add chicken pieces, season with salt, pepper, garlic powder, and Italian seasoning. Cook until chicken is no longer pink, about 6-8 minutes.
3. Remove chicken from skillet and set aside.
4. In the same skillet, add minced garlic and sun-dried tomatoes, sauté for 1-2 minutes until fragrant.
5. Pour in the chicken broth, scraping the bottom of the skillet to deglaze.
6. Add heavy cream and bring to a simmer.
7. Stir in Parmesan cheese until melted and smooth.
8. Add spinach and cook until wilted, about 2 minutes.
9. Return chicken to the skillet, mix well.
10. Add cooked spaghetti to the skillet, tossing to coat in the sauce.
11. Garnish with fresh basil, pine nuts, and red pepper flakes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stove over medium-low heat, adding a splash of cream or milk to loosen the sauce, until warmed through.
