Ingredients

2 tablespoons olive oil
1 pound boneless skinless chicken breasts
Salt and pepper to taste
1 teaspoon Italian seasoning
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1 cup grated Parmesan cheese
1/2 cup sundried tomatoes, chopped
2 cups fresh spinach
12 ounces fettuccine or other pasta of choice
Fresh basil, for garnish

Instructions

1. Cook the pasta according to package instructions; drain and set aside.
2. Season chicken breasts with salt, pepper, and Italian seasoning.
3. In a large skillet, heat olive oil over medium heat. Add chicken and cook until golden brown and cooked through, about 6-7 minutes per side. Remove chicken and let rest.
4. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
5. Stir in heavy cream and chicken broth; bring to a simmer.
6. Add Parmesan cheese and whisk until smooth.
7. Stir in sundried tomatoes and spinach; cook until spinach wilts.
8. Slice chicken and return to the skillet along with cooked pasta; toss to combine and heat through.
9. Garnish with fresh basil before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat until warmed through, or microwave in 30-second intervals until hot.
