Ingredients
12 oz fettuccine pasta
1 tablespoon olive oil
1 cup sun-dried tomatoes, chopped
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1 cup Parmesan cheese, grated
2 cups fresh spinach
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions
1. Cook the fettuccine pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add sun-dried tomatoes and garlic, sautéing for 1-2 minutes until fragrant.
3. Pour in the heavy cream and chicken broth, stirring to combine. Let it simmer for 5 minutes.
4. Add grated Parmesan cheese, stirring until melted and the sauce thickens slightly.
5. Stir in fresh spinach, cooking until wilted, about 2 minutes.
6. Season with salt and pepper to taste.
7. Add the cooked pasta to the skillet, tossing to coat evenly in the sauce.
8. Garnish with fresh basil leaves before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stovetop over low heat, adding a splash of cream or milk to loosen the sauce if necessary.
