Ingredients
1 lb cheese tortellini
4 cups vegetable broth
2 cups fresh spinach, chopped
1 cup heavy cream
1 cup diced tomatoes
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 tsp dried basil
1 tsp dried oregano
1/2 tsp red pepper flakes
Salt and pepper to taste
2 tbsp olive oil
Instructions
1. Heat olive oil in a large pot over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
2. Stir in diced tomatoes, dried basil, dried oregano, and red pepper flakes. Cook for 3-4 minutes.
3. Pour in vegetable broth and bring to a boil.
4. Add cheese tortellini to the pot and cook until they float to the top, about 5-7 minutes.
5. Reduce heat to low and stir in heavy cream. Simmer gently for another 3 minutes.
6. Add fresh spinach and cook until just wilted.
7. Season with salt and pepper to taste.
