Creamy Spinach Artichoke Dip with a Twist

Ingredients
1 tbsp olive oil
1 small onion, finely chopped
3 cloves garlic, minced
1 (14 oz) can artichoke hearts, drained and chopped
5 oz fresh spinach, chopped
8 oz cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
1 cup mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
1 tsp smoked paprika
1 tbsp lemon juice
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F (190°C).
2. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
3. Stir in artichoke hearts and spinach, cook until spinach wilts.
4. In a large bowl, mix cream cheese, sour cream, mayonnaise, mozzarella, Parmesan, smoked paprika, and lemon juice.
5. Fold in the cooked spinach and artichoke mixture. Season with salt and pepper.
6. Transfer to a baking dish and bake for 20-25 minutes until golden and bubbly.
7. Serve warm with bread or crackers.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Preheat oven to 350°F (175°C) and bake until heated through, about 10-15 minutes.
