Creamy Potato and Smoked Ham Chowder

Ingredients

1 lb smoked ham, diced
3 large russet potatoes, peeled and cubed
1 large onion, chopped
2 cloves garlic, minced
4 cups chicken broth
2 cups whole milk
1 cup heavy cream
2 tbsp unsalted butter
1 tsp dried thyme
1 tsp smoked paprika
Salt and pepper to taste
2 tbsp chopped fresh parsley for garnish

Instructions

1. In a large pot, melt butter over medium heat. Add onions and garlic, sauté until soft.
2. Stir in smoked ham and cook for 5 minutes to release flavors.
3. Add potatoes, chicken broth, thyme, and smoked paprika. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
4. Stir in milk and heavy cream, and continue to cook over low heat for another 5 minutes.
5. Season with salt and pepper to taste.
6. Serve hot, garnished with fresh parsley.

Storage

Refrigerate in an airtight container for up to 3 days.
