Ingredients

2 tablespoons olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 pound mixed mushrooms, sliced
1 1/2 cups Arborio rice
1/2 cup white wine
4 cups vegetable broth, kept warm
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and black pepper to taste
2 tablespoons chopped fresh parsley

Instructions

1. Heat olive oil in a large pan over medium heat. Add onion and garlic, sauté until translucent.
2. Stir in mushrooms, cook until tender and browned.
3. Add Arborio rice, stir to coat with oil, cooking for 2 minutes.
4. Pour in white wine, stir until absorbed.
5. Add warm vegetable broth, one cup at a time, stirring constantly until liquid is absorbed before adding more.
6. Once rice is creamy and tender, stir in heavy cream and Parmesan cheese.
7. Season with salt and black pepper to taste.
8. Garnish with fresh parsley and serve immediately.
